Mushroom Spinach Lentil Plato Bake

70g Puy Lentils, cooked 20min
40g toasted Pine Nuts
1 Albumen lightly whisked
30ml Sunflower Oil
250g frozen whole leaf Spinach, thawed and squeezed
pinch each of ground pepper and nutmeg
30g Cheese like Cheddar eg Sussex Charmer, finely grated
10-15g dry Mushrooms, soaked 30min, keeping the liquor – this amount makes for a very intense Mushroom flavour
320g Forestière Mushrooms, sliced medium, stems below cap across
100g Onion, chopped by slicing across then longways
1/4 teaspoon cinnamon

Preheated oven to 180°C

PLATO (15min)
Prepared the Plato by mixing the first three ingredients
Spread the Plato evenly on 21x16x6cm glass oven dish fully lined with parchment paper
Baked 15min

SPINACH (15min)
In small frypan fried the Spinach in 15ml Sunflower Oil for 15min
Almost from the start added the nutmeg and pepper
After cooking and cooling a little stirred in the Cheese

In large frypan fried the Mushrooms and Onions separately to begin with, distributing 15ml Sunflower Oil between them
5min before the end when the Mushrooms are starting to brown, added the dry Mushrooms to them and the cinnamon to the Onions
2min before the end added 3 tablespoons of the Mushroom liquor a little at a time to the Mushrooms, letting it evaporate as it is added
Stirred the Onions into the Mushrooms
At the end of cooking stirred in 3 more tablespoons of the liquor allowing some to evaporate with the residual heat and some to remain keeping the Mushroom mixture moist.

PLATO BAKE (about 10-20min) this makes the Mushrooms a bit chargrilled – perhaps second baking not required or covering with foil
