Minestawny (tbc)

this could be a combination between minestrone and mulligatawny
but it was not good as described below, the vegetables need longer cooking

100g Red Lentils cooked 25mins in about 700ml water
15ml Sunflower Oil
200g Fennel sliced thin across
250g small Plum Tomatoes sliced thinnish
garlic chopped
chilli sliced thinnish
ginger sliced thinnish
curry powder
garam masala
170g yogurt, Total

Kept the Lentils warm while cooking the vegetables

In a medium large frypan heated the curry powder and garam masala for a minute to release their aroma and set aside
Added 15ml Sunflower Oil to the pan and fried the garlic, chilli and ginger for a few minutes till softened then added the Tomatoes, Fennel and dry spices and fried about 10min
Poured in the cooked Lentils with the cooking liquid and stirred well
(probably better left to cook until the vegetables are tender)
Kept some aside and blended the rest with hand blender
Added the chunks back
Added the yogurt, stirred some of it in well

21.8g uncompleted legume protein
