Peanut Broccoli with Tomato and Bean Salad

For two portions:
400g tenderstem Broccoli, stems sliced medium longways, florets and leaves whole
80g crunchy Peanut butter
45ml Sunflower Oil (this is half the intended amount: 90g)
390g tinned Kidney beans
200g Crispy Leaf Salad
30g thyme, stems chopped fine, leaves left whole
2 Albumen, from 8min boiled egg, chopped
350g baby Tomatoes, sliced in half
60g Sheep’s Cheese, eg Wensleydale, sliced thinnish
lemon, pepper

BROCCOLI (25min) edit
In large frypan with 15ml (30ml) Sunflower Oil, placed the stems of the Broccoli and pepper, stirred in. Fried 25min in all. Better to add the rest of the Broccoli about 5-10mins later. For the last 3min mixed in the Peanut butter.

BEAN SALAD (10min)
In large frypan with 15ml (30ml) Sunflower Oil the thyme stems and the Albumen, fried 10min in all. For the last 5min added the Beans and the thyme leaves. After cooking mixed in the Salad and added some lemon.

TOMATOES (10min)
In small pan, placed the Tomatoes in 15ml (30ml) Sunflower Oil and fried 10min. After cooking added the Cheese.

Nutritional information per portion, based on using 90g Oil:
Complete protein 11.3g
Saturated fats 13.4g
uncompleted Legume protein 26.4g

ANOTHER TIME same recipe for one portion; slightly corrected method, also slightly different Salad:
200g tenderstem Broccoli, stems sliced in half longways, leaves and florets left whole
40g crunchy Peanut butter
45ml Sunflower Oil
195g tinned Kidney beans
1 Albumen, from 8min boiled egg, chopped
100g mild and delicate baby leaf Salad
15g thyme, chopped
200g baby Tomatoes, sliced in half
30g Sheep’s Cheese, eg Wensleydale, sliced thin
lemon and pepper(gr)

BROCCOLI (20min)
In large frypan placed the Broccoli stems in 15ml Sunflower Oil and fried 20min in all. for the last 15min added the florets and leaves. For the last 3min stirred in the Peanut butter.

BEAN SALAD (10min)
In large frypan placed the Albumen and some of the thyme in 15ml Sunflower Oil and fried 10min in all. For the last 5min stirred in the rest of the thyme and the Kidney beans. After cooking mixed in the Salad to wilt a little and squeezed on the lemon.

TOMATOES (10min)
In small no-stick pan with 15ml Sunflower Oil stirred in the Tomatoes and fried 10min. After cooking placed the Cheese on top.
